theres a horse racing game called alicia online thats like a korean mmo though it still takes a while to make progress but has the same elemt of breeding your horses. its cool but not exactly what your looking for

There is "Fish game" now. They have not added a breeding update yet, but I feel they are close to making it. Besides that, you can customize tanks, and adopt/rescue fish. I do not know how pacing goes, but I know it does not have the rollover feature.

ClanGen is the place to be!! (ClanGenerator is the full name)
It's not focused on genetics but it is most definitely a big part of the game. There's mutations, cats with no tails, melanism, hetero eyes, etc. I like playing it heaps and it's not a browser game. You have to google it to find it on itch.io, and if you're on windows, it might be recognised as a virus, but I promise, it's not!
You don't do rollovers, you press a button called "Timeskip 1 moon" and you skip time... I'm not sure how to explain it.
Anyways, I really enjoy it and I hope you can too!!

i happened to see this thread just after i recommended https://www.pixelcatsend.com/home in another, but i'll recommend it here again since i haven't seen it mentioned. it's a village manager/breeding simulator focused on cats! very casual paced game that just got out of beta 		meep
