So, I'm curious. Just before I waste a bunch of GC if I remove an unbred stud will I be able to use the Wes changer on him or will I not be able to because he was previously listed as a breeding male?

Also, if you breed a carrier x non will there be any chance of getting a carrier out of that? I'm assuming it'd be an insanely low chance.

Please don't retire your stud out of his role in order to apply applicators! The game wants you to take him off public studding and then you can apply the apps; afterwards, you'll be good to go to put him back up.
The only thing preventing you from using the app on him is if he is listed for public studding.

Here is the full list of possibilities:

Non Carrier x Carrier = 90% Non Carrier, 10% Carrier
Non Carrier x Mutation = 15% Carrier, 85% Non Carrier
Carrier x Carrier = 10% Carrier, 10% Mutation, 80% Non Carrier
Carrier x Mutation = 15% Carrier, 15% Mutation, 70% Non Carrier
Mutation x Mutation = 10% Carrier, 20% Mutation 70% Non Carrier

I think they were asking if they can do the full remove-breeding male process on a Breeding Male who has never been bred, and then use a sex changer on him to make him a female.

I'm assuming you want to turn your unbred Albino Carrier, currently set as a Breeding Male, into a female and use an Albino or Albino carrier stud for her?

I would submit this question to the mod box before, like you said, wasting a bunch of GC.
