herbalists: smarts and wisdom, although it seems herbalist proficiency and level seems to be more important

scouts: nothing in particular, although you need 101 strength to scout the rainforest and 101 wisdom to scout the glacier (both until fully unlocked, then any level wisdom/strength)
mentors: nothing in particular really, although having higher stats will help make sure they can be higher than the stat of the pups they're training. they also have to have at least 5 levels.
scouting:

-riparian woodland & glacier: wisdom

-desert & rainforest: strength
death roll starts at 7 years 6 months for studs and all pack members
leads live until 8 years unless retired early (paid by gc)
puppies must be assigned a pup sitter that has enough proficiency to cover the gap in their "survival rate" to survive until adolescence.
if you have 3 puppies that have a 30% chance of survival on a brand new nbw found in explore, none of the babies will be covered 100% and all three are subject to the possibility of death on rollover.
muties, aka brach, polymel, polyceph, and conjoined all require a jellyfish (bought in the grove for 10gc) to survive past puppyhood.
5 years / 120 rollovers: ability to become a mentor if at or above level 5
7 years 2.5 months / 173 rollovers: females lose their heat here, no more breeding from here on out.
7 years 6 months / 180 rollovers: can be retired with no fee if not a lead or stud. pack members and studs can rng roll to die on each rollover starting at this age
7 years 11 1/2 months / 191 rollovers: the last day of life for any and all of the pack. will die on rollover.
adol training stipulations: an adol can only gain 19 "proficiency" at once in a role. switching them to a new role before they become an adult will help in stat gain.
puppy stat training

for a puppy to get 100% of the available points shown above, the adult training the puppy must be at the very minimum 50 points above the pup's stats. if the adult has 160 in strength but the puppy has 150 in strength, it won't get the full 27 possible points for training with that adult as its teacher/mentor.
the adol cycle is 6.5 rollovers/days. during this cycle, if training in hunting, pup sitting, scouting, or herbalism they can gain 1-2 points on the stat they're trained for (or stats, for chasers and stalkers). with this said, the total bonus of adol training would be between 6.5 and 13
